Happy to have more jars filled with this favourite taste of summer. Forgot how much work this is and how tired I feel afterwards, but it's worth it. Still have more canning ahead!
My guys love my salsa, so much so, that I've learned that filling quart jars instead of pints saves me on lids. ;o) |

Yummy! We just finished roasting and freezing hatch peppers. Salsa would be a nice "next" project!
ReplyDeleteTis the season! My tomatoes are nowhere near ready to pick yet - I've gotten a few cherry tomatoes so far, but mostly they're still green. I only have a few plants though - just enough for us to eat, not enough to process. My neighbour's 'maters are ripening faster than mine (even though we live right beside each other, lol) so she's been keeping us supplied with them - she's a sweetie :) This afternoon I'm baking a Tomato Parmesan Tart with some of the riper ones she's given us, and she's giving us some tomato sauce when she gets it canned :) (LOL blogger spell check says neighbour's is wrong, but 'maters is right! LOL!)

Looks good! Do you have a go to canning recipe you use? I want to try and can some tomatoes but my husband thinks we need a huge crop so maybe salsa is the way to go.
